  • Beef Tips with Mushroom Gravy

    • Ingredients:

      Cooking Spray

      1 lb beef tenderloin tips (if you can't find any, have the butcher cut up a 1 Lb tenderlion steak)

      1 pint mushrooms

      1 cup fat-free beef broth

      1 1/2 tablespoon cornstarch

      1/2 teaspoon salt (I don't use the salt)

      1/4 teaspoon black pepper ( I used the garlic pepper mix for extra flavor)

      Cook Time: 15 mins Type of Meal: lunch, dinner

    1. Coat a large skillet with cooking spray over high heat. Add beef tip and saute for 5 - 6 mins or until browned well. Remove beef from pan, set aside.

    2. Add mushrooms to pan and saute for 4 - 5 mins.

    3. In a small bowl, whisk together the beef broth and cornstarch, pour mixture over mushrooms, scraping browning bits from bottom of pan, reduce heat and simmer for 2 minutes.

    4. Stir in salt and pepper. Return beef tips any any juices and stir into gravy.

    Serve over either rice or Texas toast! With a side of bagged salad, embellished with fresh toms, cucumbers, a few shrooms, some diced green peppers. Or steamed veggies. Yummmm!! Quick and easy meal! 

    I do cheat a little on this and use the Pizzazz to cook the Texas Toast in the dunes! 

    Calories =

    169 per serving for beef/mushroom gravy mix

    140 x 2 per Texas toast serving ( you can get a little lower with the rice)

    Total = 449 calories

    Serving size = 1/4 of the recipe

    Oh yeah!! And whatever the calorie content of your chosen beer I believe Budlight = 100 cals??
