    Food ideas and recipes for grubbin at the dunes.

    Type of Meal: lunch, dinner
    1. Coat a large skillet with cooking spray over high heat. Add beef tip and saute for 5 - 6 mins or until browned well. Remove beef from pan, set aside.
    2. Add mushrooms to pan and saute for 4 - 5 mins.
    3. In a small bowl, whisk together the beef broth and cornstarch, pour mixture over mushrooms, scraping browning bits from bottom of pan, reduce heat and simmer for 2 minutes.
    4. Stir in salt and pepper. Return beef tips any any juices and stir into gravy.
    Serve over either rice or Texas toast! With a side of bagged salad, embellished with fresh toms, cucumbers, a few shrooms, some diced green peppers. Or steamed veggies. Yummmm!! Quick and easy meal! 
    I do cheat a little on this and use the Pizzazz to cook the Texas Toast in the dunes!

    169 per serving for beef/mushroom gravy mix
    140 x 2 per Texas toast serving ( you can get a little lower with the rice)
    Total = 449 calories
    Serving size = 1/4 of the recipe
    Oh yeah!! And whatever the calorie content of your chosen beer I believe Budlight = 100 cals??

    Type of Meal: snack, lunch, dinner
    Fry the tortillas until they are soft and pliable and blot the oil off with a paper towel (believe me, this will make it easier to fill the tortillas). Mix the soup and enchilada sauce in a bowl. Put a thin layer of this mixture on the bottom of whatever pan you are using (prevents burning). Fill and roll as many tortillas as you can with some of the chicken, a thin slice of cream cheese and some of the green chilies. Once your pan is full, pour the remaining soup/sauce mixture over the top of the rolled tortillas. Cover with shredded cheese and sliced olives. Bake at 350 for about 35 to 45 minutes.

    DUMONT DUNES DIP

    Type of Meal: snack
    Preheat oven to 350
    (this can be microwaved 6 mins, but its not as good)
    Mix all ingredients in a large bowl
    Spray a baking pan (standard cake sized) with cooking spray
    Put ingredients into pan
    Bake until bubbly and beginning to brown on top (I usually get impatient and end up broiling it )
    Serve with your favorite corn chips
    Stand the heck back and watch it disappear!! 
    It was named Dumont Dunes Dip cause someone didn't like Artichokes .
    To make myself feel better, I use all the low fat things I can find!

    Banana Split Cake

    Type of Meal: dessert
    6 1/2 graham cracker sheets
    1 ounce sugar-free instant vanilla pudding mix
    2 cups fat free milk
    8 ounce package low fat cream cheese
    10 ounce can crushed pineapple in 100% juice (not heavy syrup) drained
    4 medium banannas, sliced
    8 ounce container sugarfree cool whip
    1 med pkg pecans (chopped)
    Cover the bottom of a 9x13 - inch pan with graham crackers sheets
    In a medium bowl, prepare pudding with milk according to package directions. Add cream cheese to puddng and whip together. Spread pudding mixture over graham crackers.
    Spread the crushed pineapple over the pudding layer and top with sliced banannas, then layer with whip topping. Sprinkle with pecans.
    Chill for 1/2 hour
    You can also serve with sliced strawberries with the bananna layer!! 
    Don't tell people that its low fat, sugarfree until AFTER they eat it! They won't believe you!
